HOMEMADE CREAM SOUP 1/3 c. dried milk 2 T. cornstarch 1 t. dried minced onion 1/4 t. thyme leaves 1/4 t. basil...leaves dash pepper 1 chicken boullion cube 1-1/4 c. water. Combine in saucepan. Cook and stir over medium heat until thick. This replaces one can of condensed soup. SPLIT PEA SOUP 2 c. dried split peas, soaked overnight and then drained 1 c. chopped onions 2 garlic cloves 1 stalk celery, chopped 1 carrot, chopped 1/3 c. chopped ham 1 bay leaf 1 t. salt 1/2 t. thyme 6 whole peppercorns water to cover Cook in crock pot for 6-8 hours or until done. CORN CHOWDER 3 slices bacon, chopped into 1/2" pieces 1/2 medium onion, chopped 4 peeled potatoes, cubed 1 c. water 2 c. DRAINED canned corn 1 can evaporated milk 3 more cups water 1-1/3 c. dry milk 2 t. salt 1/8 t. pepper (several grinds) Slice bacon, chop onion. Fry bacon, then add onion and fry until brown. Add 1 c. water and potatoes, cook until soft. Add remaining ingredients and heat through. SOUTHWESTERN BEAN SOUP 1 16 oz. can red kidney beans, rinsed and drained 1 - 15 oz. can black beans, rinsed and drained 3 c. water 1 16 oz. can tomatoes, juice and all 1 16 oz. can corn, drained 1 large onion, chopped 2 cloves garlic, minced 1 chopped medium pepper (cubanella or banana) 4 chicken boullion cubes 1 to 2 t. chili powder Simmer for about an hour. BROCCOLI SOUP 1 small onion, chopped 2 T. margarine 4-1/2 c. water 1/2 t. garlic salt 3 chicken boullion cubes 4 oz. spaghetti 1 10 oz. pkg. frozen broccoli 1 12 oz. can evaporated milk 4 oz. (6 slices) American cheese Saute onion in margarine. Add water and garlic salt, heat to boiling. Add boullion cubes, dissole; add spaghetti, breaking into 4" lengths as you put it in, bring to boiling and cook for 3 minutes. Then add broccoli, cook for 3 minutes. Remove from heat and add milk and cheese, stir until blended.
