BREAKFAST STRATA 1/2 lb. turkey sausage, browned and drained 6 slices bread 1/2 c. grated mozarella 1/2 c. grated cheddar 5 eggs 2 cups half and half 1/2 t. salt 1 t. dry mustard Put bread slices in a 9 x 13" pan. Sprinkle browned sausage and grated cheese evenly over the bottom of the pan. Mix last four ingredients and pour over. Chill overnight (8 hours) and bake at 350 for 40-50 minutes. REFRIED BEANS 1-1/2 c. uncooked pinto beans 1/3 c. finely chopped onions 2 cloves garlic 1 T. oil 1 t. cumin Soak beans overight, drain and then cook until mushy. Mash in blender. In large frying pan, sautee onions and garlic in oil. Add beans and cumin. Salt to taste as desired. GRANOLA 6 c. regular oats 1 c. wheat germ 1/2 c. sunflower seeds 1/2 c. sliced almonds 1/4 t. salt 1 c. honey 3/4 c. vegetable oil 1/2 c. water 1 t. vanilla Mix first five dry ingredients; set aside. In a small pan over low heat, mix honey, oil and water. Add vanilla when warm. Combine liquid with dry ingredients, mix well. Bake in large pan at 300 for one hour, tossing once during baking. FRENCH TOAST 3 eggs 1 c. milk 2/3 c. pancake mix Mix ingredients with a wire whisk. Dip bread slices into it and then fry on a hot griddle.
